Day After Thanksgiving Recipe

I created this dish last night and it was super easy, a one skillet meal, and was very tasty. Perfect for the day after Thanksgiving cooking hangover. I hope you enjoy it!

Shrimp Puttanesca for Two

Sauté in Olive Oil in a deep skillet until barely soft:

- 3 cloves Garlic, sliced

- 1 Shallot, sliced

- 1 tsp Italian Herbs

- Pinch of Red Pepper

Add to the skillet and cook for one minute:

- 1 Tblsp Capers, drained

- 10 Kalamata Olives, halved

Stir in and season lightly with salt and pepper:

- 2 cups Chicken Stock

- ¼ cup Tomato Sauce

- 1 Tblsp Tomato Paste

Stir in and cook according to package directions:

- 4 ounces Spaghetti or Linguini

Halfway through pasta cooking add:

- 3 Roma Tomatoes, rough chopped

Nestle into sauce and cook until just barely pink:

- 1/3 pound Shrimp

Garnish with a sprinkling of grated parmesan and torn basil leaves.

Serve with baked garlic bread.
